Birthday Cake: Banana & Honey

RECIPE: BANANA & HONEY CAKE!
Made with Costa Rica cost-effective ingredients. 



Hercules' 1st Birthday!!


Hercules' 1st Birthday! It's not easy finding cost-effective pupcake ingredients living down in Tamarindo, Costa Rica. Niko's been spoiled with simple things like peanut butter but since a small jar of peanut butter costs close to $7 USD, we will just have to improvise with new ingredients. This time we used Banana & Honey frosted with Basil cream cheese & Dulce de Leche. 

Birthday party at the office this morning for Hercules with Raimundo & Niko. Dingo, West and Pacho didn't show up to work. 

Part I: The Cake

1      cup all purpose flour
1      teaspoon baking soda
2      medium sized ripe bananas mashed
2      tablespoons honey
1      egg
1      cup water

Part II: Frosting

1/2   ounce fat free cream cheese
2      tablespoons plain greek yogurt
1      tablespoon vanilla
1      teaspoon honey

Yields: 6-8 pupcakes



DIRECTIONS

The Cake

1.   Pre-heat oven to 375ºF
2.   Line a cupcake tray with Spray a paper cupcake holders.
3.   In a large mixing bowl, mix together the wet ingredients (egg, mashed bananas, honey).
4.   Add in flour and baking soda.
5.   Add water last, as needed in order to create a mixture and consistency of a typical cake batter
6.   Pour the batter into the pan and bake for ~35 minutes
7.   Remove the cake from the pan and allow it to cool completely before frosting.


Frosting

1.   Use a spatula and frost each pupcake with cream cheese
2.   Spread frosting over the cake.
